Pedro Miguel Schiaffino is a Peruvian chef, owns two restaurants in Lima, Malabar and Ámaz, and runs Schiaffino Gastronomica Catering. He hosts the culinary TV show “Desde el Jardin,” is an F&B advisor for the cruise line Aqua Expeditions, and started Despensa Amazonica, an NGO dedicated to sustainable Amazonian cuisine, culture, and biodiversity. Schiaffino has twice been honored by the Peruvian government: in 2016 for his work and support of Peru’s biodiversity, and in 2006 for his contribution to the development of Peruvian gastronomy. He received the International Academy of Gastronomy’s Chef L’Avenir Award, and Food & Wine magazine named Malabar one of 2009’s most interesting culinary experiences.
